Baked Eggs with Creamy Spinach Recipe

Ingredients
- 8 medium eggs
- A knob of butter
- 75g baby spinach, roughly chopped
- 2 tablespoons pesto
- 125ml cream
- 125g creamy goat’s cheese
- 30g finely grated cheese
- Salt and freshly ground black pepper
To Serve:
- Crusty bread
Method
- Heat the oven to Gas Mark 6, 200°C (400°F).
- Grease 4 x 12cm round ovenproof dishes with the knob of butter.
- In a bowl, mix together the chopped spinach, pesto, cream, goat’s cheese, salt, and freshly ground black pepper.
- Spoon this mixture evenly into the prepared dishes.
- Break two eggs into each dish.
- Sprinkle the finely grated cheese over the top.
- Bake in the oven for about 10 minutes, or until the egg whites are set but the yolks remain runny.
- Serve immediately with crusty bread.
